This is an easy breakfast dish inspired by my mom. She would make something similar to this for me when I was a kid. She would make french fries and then add the eggs on top. I tweaked it a bit and gave it my own twist. You can use a different oil, and change up the spices to your taste. This recipe can be doubled easily.
